How to Make a Super Easy Vegan Brunch

I love the weekend. Sleeping in, doin' nothing and cooking something special for breakfast or brunch. Making brunch vegan is actually easy.

Mains:
We love making homemade waffles and pancakes. There are also lots of vegan freezer waffles that you can just pop in the toaster. Here's a really easy pancake recipe: here
It's also fun to do vegan chicken and waffles with vegan chick'n nuggets or homemade chicken fried tofu, i have a recipe for that too: here
We also love french toast. Vegan french toast is super easy to make, it's basically just flax or chia egg, plant milk, sweetener and cinnamon. It's so good especially topped with fresh strawberries and coconut whipped cream.
There's also vegan breakfast sandwiches, fried tofu (for the egg), breakfast sausage and vegan cheese on an English muffin.
Bagels with cream cheese. My favorite brands of cream cheese are Tofutti plain cream cheese and Miyoko's Unlox Your Dreams cream cheese.
Sides:
Hash browns. We like the hash brown patties.
Vegan bacon. You can make your own with tofu, tempeh or coconut or get store bought from brands like Lightlife, they have tempeh bacon too. Or Sweet Earth Benevolent bacon.
Vegan Sausage. My favorite vegan sausage for breakfast is the Lightlife Gimme Lean Sausage. Field Roast makes yummy mini apple sage breakfast sausages
Tofu Scramble. We can't have brunch without tofu scramble, here's an easy recipe: Here.
Fruit. Fruits like oranges, blueberries, strawberries and apples are always great in the morning.
Yogurt. Sometimes we like to make Parfaits with soy yogurt, granola and fruit and layer them. Silk makes really yummy yogurts with different fruits.
I recommend combing some (or all if you're just that hungry) of these and mixing and matching to create your own delicious brunch at home!
