This recipe is great for people who want a breakfast scramble but don't eat soy!
This morning i was craving a savory breakfast but we were out of tofu! i spotted a lonely can of chickpeas on the pantry and black salt with the seasonings so i thought making a scramble with chickpeas sounded like a delicious replacement! This recipe is super simple and cheap, i found black salt in my local Indian grocery store for about $2 and the bag lasts a long time, a little goes a long way so add it sprinkles at a time so it won't be overwhelming. You can make this without black salt and just more sea salt and it will still be a great breakfast.
I toasted an Everything bagel and put it on with cilantro, i also had some on the side and an avocado bagel.
Ingredients:
1 can of chickpeas (drained)
half of a small onion
1 tsp minced garlic
1 tsp lemon juice
1 tsp chili lime seasoning
1/2 tsp sea salt salt (more if omitting black salt)
1 - 2 tsp of black salt
1 tbs olive oil
Cilantro or green onion for garnish
Toasted bagel or toast to serve
1. Add drained chickpeas to a bowl and mash until desired consistency, i like mine more mashed with a few whole chickpeas.
2. Add olive oil to a frying pan on medium heat, saute onions until almost soft and add garlic.
3. Add mashed chickpeas, lemon juice and seasonings.
4. Serve!
