Another dish my mom veganized for us! This spicy, filling spaghetti dish uses Trader Joe's Soyrizo, Gardein Beef-less grounds, chunky tomatoes and seasonings.
Ingredients:
1 large onion, sliced and cut into half rings
2 tablespoons of olive oil
1 tablespoon minced garlic
1/2 a bag of beef-less grounds (Gardein, Beyond Meat, Trader Joe's)
1 package of Trader Joe's Soyrizo
1 teaspoon salt
1 28oz can crushed tomatoes, ground peeled (Chunky Style)
¼ cup soy sauce
1 tbs of lemon juice
1 teaspoon dry basil or Italian seasoning
1/2 a cup of water (optional)
1 pound spaghetti, cooked in water
1. In a large pot, cook spaghetti according to package instructions. Drain, toss in olive oil to prevent sticking and set aside.
2. In the pot you made the spaghetti in, add 2 tablespoons of olive oil and turn the stove on medium heat.
3. Slice onions and remove plastic casing from Soyrizo
4. Add onions, cook until translucent. Add garlic and cook for 1-2 minutes, careful not to let it burn. Saute the grounds until they're no longer frozen
5. Add Soyrizo the grounds. Cook for 5-10 minutes.
6. Add crushed tomatoes, soy sauce and seasonings. Simmer for 5-10 minutes.
If the sauce is too thick, add water.
7. Add spaghetti to sauce or spoon on top!
