Easy Vegan Breakfast Sandwich in 10 Minutes!


My favorite hobby is veganizing popular and trending foods. Like the Egg McMuffin from McDonald's sounded so good this morning and it can be made vegan so easy, i made this in 10 minutes!


The English Muffin:

Most plain English muffins are vegan so just look in your local grocery store, i found these at Kroger.


The Egg:

For the fried egg, i sliced drained tofu into squares and dusted them in: turmeric, salt, garlic powder and if you like pepper you can add it. I fried the squares in olive oil for two minutes on each side until they were crispy and golden.


Cheese:

After i toasted the English muffin, i quickly put a slice of Daiya cheddar slices in between them to melt while i cooked the tofu. You can use whatever vegan cheese you like or just use nutritional yeast.


Deli Slice:

I added a slice of vegan deli meat by Field Roast in between for more flavor. I used the Smoked Tomato Flavor.


Then i assembled the sandwich! I also spread some Miyoko's Vegan Butter on the muffin, added a deli slice, tofu squares and the cheese was melted on it. I thinly sliced some apples and had a coconut water with the meal. It was so good.
