It's Tuesday so of course we're gonna have tacos but my mom wanted fish tacos this week so we're gonna make them! I'm also going to make some toppings from scratch, guacamole, pico de gallo and cowboy caviar.
For the ''fish'', I'm gonna use my trusty crispy tofu method: I drain out the excess water and press the tofu for 15-20 minutes. After the tofu is pressed and most of the water is out, i cut them into little sticks.
I combined some seasonings to make the tofu ''fishy''. I added about a 1/2 tablespoon each of kelp flakes, Old Bay, garlic powder, paprika, a 1/2 tsp of turmeric for a little color and salt with about a cup of cornstarch and coated the tofu in the mixture. Then fried them in vegetable oil and drained them on a paper bag.
For the Cowboy Caviar, i combined the following ingredients in a bowl:
1 can of cooked and drained black beans (i also rinsed them)
1 cup of corn kernels
Diced red onion
Chopped cilantro
Diced bell pepper
1 tablespoon of Lime juice, 1 teaspoon of red wine vinegar, 1 teaspoon of Frank's Hot Sauce, 1 teaspoon of sugar, 1 tsp of cumin, 1 tsp of garlic powder, salt and paprika to taste.
I mixed all the ingredients and put it in the fridge.
This tastes so delicious and fresh, I'm definitely gonna make it more often.
For the Pico, i diced onion, tomatoes and jalepeno. Added lime juice, cilantro and salt.
We had heirloom tomatoes so my Pico was super colorful.
And for the guacamole i used my dad's famous recipe. But that's a secret.
I chopped up some cabbage for topping too.
Now that everything's finished, we can assemble! I went: Guac, fish sticks, Cowboy Caviar, and pico on top but you can go whatever order you desire.
Serve with chips, salsa and extra guac (for free) 😆
