Veganizing Gordon Ramsay's Huevos Rancheros

As I've said before, i love veganizing non-vegan recipes and i get inspiration from watching popular Chefs and cooking shows. I was watching Gordon Ramsay's YouTube channel and he made his version of Huevos Rancheros for brunch and i thought it looked delicious. With a little tweaking, i created my own version with vegan Soyrizo from Trader Joe's, a fried tofu ''egg'' and that amazing sauce all on top of a nice tortilla.



Here's what you'll need:


Sauce:

2 bell peppers, diced (preferably green or red)

1 package of Trader Joe's Soyrizo

1 onion, diced

1 can of diced tomato

2 tbs minced garlic

1/2 tbs of ground cumin

1/2 tsp liquid smoke

1 tbs olive oil


Tofu Egg:

1 block of Extra firm or firm tofu, drained and cut into squares

1 tsp ground turmeric

1 tsp soy sauce, tamari or aminos

1 tsp 21 Seasoning Salute from Trader Joe's or your favorite seasonings

1 tbs of vegan butter or olive oil


Black beans:

1 can rinsed and drained black beans

1/2 tbs of ground cumin

1 tsp garlic powder

1 tsp lime zest and juice

1 tbs oil

Salt to taste


Corn tortillas, cilantro, lime juice, vegan cheese and vegan sour cream for serving.


1.First, we're gonna drain the tofu and put a heavy object on top.


2.Then dice the onion and bell pepper, if you have whole garlic cloves you can mince those now but mine is from a jar.


3. Heat the olive oil and add diced onions, bell pepper and garlic. Add cumin, Chef Ramsey says to add it generously. I couldn't find the chipotle puree so i just added some liquid smoke.


4. Next, add vegan chorizo, aka Soyrizo. Trader Joe's makes a really yummy one also No Evil Foods makes vegan chorizo.


5. Add a can of diced tomatoes and cook for 3-5 minutes.


6. He uses a hand blender to blend the sauce but i only have a regular blender and a food processor so i let the sauce cool down (never put hot liquid in a blender!) and then blended a little more then half of it until it was smooth. I kept some aside because i like it with a little bit of chunks.



7. Next, the tofu egg. After the liquid is drained out of the tofu cut the tofu into squares, mix together the turmeric, aminos or soy sauce and paprika. Rub this mixture on the tofu squares.


8. Heat a pan and add vegan butter or olive oil, add tofu squares and cook for 2-3 minutes on each side on medium heat until crispy and golden.




9. Lastly, we make the beans. Drain the beans and heat in a pan with olive oil. Zest half a lime over the beans and then add the cumin, garlic powder and the juice from the lime.


10. Heat tortillas.


11. Put down 2 warmed tortillas on a plate, spread some sauce, add tofu squares and scatter the black beans in a relaxed manner. Add a little more sauce if desired and add avocado, cilantro and lime juice. I also added some vegan cheese.




12. Serve!
