So, sometimes i like to experiment and test different recipes to see what i can create. Today i was craving ravioli and the brand i used to get stopped making the tofu ricotta kind i liked. I had attempted ravioli before but it kind of failed, this time i did some research and found an easy one for the dough by Gourmandelle. Sadly i can't eat mushrooms so i only used the recipe for the dough. The first thing i did though was made an easy pasta sauce that i made up on the fly.
Pasta Sauce:
1 can of tomato sauce
2 tsp Italian seasoning
2 tsp sugar
2 tsp salt
2 tsp garlic powder
1/4 cup of diced onion
1 tbs olive oil
I sauteed the diced onions in olive oil and then added the rest of the ingredients and let it simmer while i made the ravioli.
I made the dough, placed it back in the bowl, covered it with a towel and set it aside to make the filling. I drained a half a block of tofu, added it to a bowl and mashed it up (you could also blend this)
Tofu Ricotta Filling:
2 tsp Trader Joe's 21 Seasoning Salute
2 tsp Red wine vinager
2 tsp garlic powder
2 tsp salt
2 tsp dried basil
i set this aside, rolled out the dough and cut into circles using a cup and filled with a small scoop of the filling. I also used a fork to seal the ravioli.
I boiled them for 3 minutes until the started to float, scooped them out the water, plated and then poured sauce over them. These little ravioli are so good and satisfied my craving perfectly. I would definitely experiment with different fillings and and sauces. This was super easy and fun.
